Preheat & Prep: Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray. (5 minutes)

Combine Cheese Mixture: In a large bowl, combine mozzarella cheese, Cheddar cheese, sour cream, and mayonnaise; mix until well combined. (5 minutes)

Mix Potatoes and Cheese: Gently add the drained potatoes to the cheese mixture and toss, being careful not to mash the potatoes. Use a wooden spoon or flat spatula. (5 minutes)

Leaving the potato skins on adds texture and nutrients, but feel free to peel them if you prefer a smoother casserole.
For a richer flavor, use a combination of sharp Cheddar and Gruyere cheese.
Make ahead: Assemble the casserole ahead of time, cover, and refrigerate. Add about 15 minutes to the baking time.
