Cook the Omelet (5-7 minutes): As the omelet begins to set, use a spatula to gently lift the edges, allowing the uncooked egg to flow underneath. Continue this process until the omelet is mostly set but still slightly moist on top. Sprinkle lightly with sea salt.

Add the Filling and Finish (2-3 minutes): Spoon the cooked asparagus mixture onto one half of the omelet. Sprinkle with feta cheese and Cheddar cheese (if using). Gently fold the other half of the omelet over the filling, pressing the edges lightly to seal. Cook for another 1-2 minutes, or until the filling is heated through and the Cheddar cheese (if used) has melted and is bubbly. Cut into slices and serve immediately.

For an extra burst of flavor, consider adding a pinch of red pepper flakes to the vegetable mixture.
Feel free to substitute other vegetables based on your preference and what's in season. Mushrooms, zucchini, or sun-dried tomatoes would all be delicious additions.
Use a high-quality non-stick skillet to prevent the omelet from sticking and ensure easy folding.
If you don't have feta, goat cheese or ricotta salata make great substitutes.
Adjust the amount of feta cheese to your liking, depending on how tangy you want the omelet to be.
