Prepare the grill: Preheat an outdoor grill to medium-high heat (about 375-450°F) and lightly oil the grate. (5 minutes)
Make the vinaigrette: In a small bowl, whisk together the olive oil, salt, and black pepper. (2 minutes)
Cut the cauliflower steaks: Place each cauliflower head stem-side up on a cutting board. Carefully cut two 1 to 1 1/2-inch thick "steaks" from the center of each head.
