Place the ham bone in a large slow cooker.

Heat olive oil in a large saucepan over medium-high heat. Add celery, onion, and garlic; sauté until onion is translucent, about 5 minutes. Transfer the sautéed vegetables to the slow cooker.

Sauté potatoes, bell pepper, and carrots in the same saucepan until lightly coated in oil and slightly softened, about 3 minutes. Transfer the vegetables to the slow cooker. Add chicken broth (or water), black beans, vegetable juice, corn, tomatoes, green chilies, cumin, salt, and pepper. Stir well to combine.

Cover the slow cooker and cook on High for 1 hour to bring the soup to a simmer. Then, reduce the heat to Low and continue cooking for 5-6 hours, or until the ham is very tender and the flavors have melded.

Remove the ham bone from the soup. Let it cool slightly, then separate the meat from the bone. Discard the bone and any excess fat. Shred the ham and return it to the soup. Cover the soup and refrigerate for at least 4 hours, or preferably overnight. This allows the flavors to deepen and makes it easier to remove any solidified fat.

Before serving, skim off any solidified fat from the top of the soup. Reheat gently over medium heat until warmed through. Taste and adjust seasonings as needed. Serve hot.

For a richer flavor, use homemade chicken broth. You can also add a bay leaf or two to the soup while it simmers, removing them before serving.
If you don't have a slow cooker, you can make this soup on the stovetop. Simmer it gently for at least 2 hours, or until the ham is very tender.
Feel free to customize the vegetables in this soup to your liking. Carrots, zucchini, or green beans would all be delicious additions.
Garnish with a dollop of sour cream or Greek yogurt, chopped cilantro, or a sprinkle of shredded cheese for an extra touch of flavor.
