For a richer flavor, use smoked ham hock instead of ham steak. Remove the hock before serving. Feel free to add other root vegetables such as parsnips or turnips for added complexity. If you prefer a thicker stew, mash some of the potatoes against the side of the pot towards the end of cooking. A splash of apple cider vinegar or a squeeze of lemon juice at the end brightens the flavors.
