Follow The Directions

01

Step
2 mins

In a medium bowl, combine the ground turkey, apple cider vinegar, chili powder, smoked paprika, garlic powder, kosher salt, ground cumin, ground coriander, dried oregano, ground black pepper, and red pepper flakes.

02

Step
5 mins

Using your hands or a sturdy spoon, thoroughly mix all the ingredients until well combined. Ensure the spices are evenly distributed throughout the turkey.

03

Step
8 hrs

Cover the bowl tightly with plastic wrap and refrigerate for at least 8 hours, or preferably overnight, to allow the flavors to meld and deepen.

04

Step
2 mins

Heat the olive oil in a skillet over medium heat until shimmering, about 2 minutes.

05

Step
1 mins

Add the turkey chorizo mixture to the skillet. Using a wooden spoon, break up the turkey into small pieces.

06

Step
9 mins

Cook, stirring occasionally, until the turkey is fully browned and cooked through, approximately 8-10 minutes. Ensure no pink remains.

For a smokier flavor, use hot smoked paprika.
Adjust the amount of red pepper flakes to control the spice level. For a milder chorizo, omit them altogether.
If you don't have apple cider vinegar, white vinegar or lime juice can be used as substitutes.
This chorizo can be made in larger batches and frozen for later use. Be sure to cool completely before freezing in an airtight container.

The overnight refrigeration really makes a difference. The flavors are so much more pronounced. Will definitely be making this again!

This recipe is amazing! So much better than the store-bought stuff. I used it in breakfast tacos and they were a huge hit!

I was looking for a healthier chorizo option and this fit the bill perfectly. Easy to make and full of flavor. I added a pinch of cayenne for extra heat.
