For an even richer flavor, consider using a high-quality local honey. If you don't have a vanilla bean, you can substitute 1-2 teaspoons of pure vanilla extract, added after cooking the custard. Don't discard the vanilla bean pod! Rinse it, dry it, and store it in a jar of sugar to make vanilla-infused sugar. Adjust the amount of honey to your liking. Start with 3 tablespoons and add more to taste. Make sure your ice cream maker is thoroughly chilled before churning.
