Follow The Directions

Step

Combine cranberries, orange juice, water, cinnamon stick, and vanilla extract in the Instant Pot. (2 minutes)

Close and lock the lid. Select high pressure and set the timer for 1 minute. Expect approximately 10 minutes for the pressure to build.

Once the cooking cycle is complete, immediately turn off the Instant Pot to prevent the cranberries from bursting. (1 minute)

Allow the pressure to release naturally for about 7 minutes before carefully unlocking and removing the lid. (7 minutes)

Turn the Instant Pot back on and select the Sauté function. Stir in the granulated sugar and brown sugar until fully dissolved. Season with a pinch of salt. (5 minutes)

Once the sugar is melted, turn off the Instant Pot. Taste the cranberry sauce and add more granulated sugar, 1 tablespoon at a time, if desired. (3 minutes)

Transfer the sauce to a serving dish and garnish with orange zest. Serve warm or chilled. The cranberry sauce will thicken as it cools. (2 minutes)

For a richer flavor, consider adding a tablespoon of orange liqueur or a splash of balsamic vinegar after cooking.
If you prefer a smoother sauce, use an immersion blender to partially blend the cranberries after cooking.
This cranberry sauce can be made up to 3 days in advance and stored in an airtight container in the refrigerator.
