Engage the Saute function on your multi-functional pressure cooker (such as Instant Pot®). Add olive oil and allow it to heat until it shimmers, approximately 3-5 minutes.

Season the pork tenderloin generously with Greek seasoning, salt, and pepper. Place the seasoned tenderloin into the preheated pot and sear on all sides until nicely browned, about 3 minutes per side. Remove the tenderloin and set aside on a plate. Pour apple juice into the pot and deglaze by scraping up any flavorful bits from the bottom of the pot.

Insert the rack into the Instant Pot®. Place the browned tenderloin on the rack. Close the lid securely and lock it. Select high pressure and set the timer for 10 minutes. Allow the pot 10-15 minutes to come to full pressure.

Allow the pressure to release naturally for 10 minutes. Then, quick-release any remaining pressure. Carefully unlock and remove the lid. Gently lift out the tenderloin and let it rest for 5 minutes to allow the juices to redistribute.

While the pork rests, remove 1/4 cup of the cooking liquid from the pot and whisk it together with cornstarch to create a smooth slurry. Pour the slurry back into the pot. Select the Saute function again and simmer the sauce until it thickens to your desired consistency, about 5 minutes. Slice the pork tenderloin and drizzle generously with the luscious sauce.

For an even richer flavor, consider adding a tablespoon of Dijon mustard to the apple juice before cooking.
Ensure the pork tenderloin reaches an internal temperature of 145°F (63°C) for optimal safety and doneness.
Serve with roasted vegetables or mashed potatoes for a complete and satisfying meal.
