Step

Turn on a multi-functional pressure cooker (such as Instant Pot) and select the Saute function. Add butter and olive oil and heat until butter is melted. Stir in the chopped onion and leeks. Saute until the onions are very soft and translucent, about 5 minutes.

Add the sliced carrots and quartered potatoes to the pot. Sprinkle curry powder evenly over the vegetables and stir to combine well. Pour in the chicken broth, ensuring the vegetables are mostly submerged.

Close and lock the lid of the Instant Pot, and set the vent to the sealing position. Select the Soup mode according to the manufacturer's instructions and set the timer for 12 minutes. Allow 10 to 15 minutes for the pressure to build inside the pot.

Once the cooking cycle is complete, release the pressure using the natural-release method according to the manufacturer's instructions, about 15 minutes. Carefully unlock and remove the lid.

Stir in the half-and-half to enrich the soup, and season generously with sea salt and freshly ground black pepper to taste. Serve hot and garnish with fresh herbs if desired.

For a richer flavor, consider using homemade chicken broth.
If you prefer a smoother consistency, use an immersion blender to partially blend the soup after cooking.
Garnish with a swirl of cream or a sprinkle of fresh parsley before serving.
