Follow The Directions

01

Step

Engage the 'Sauté' function on your multi-functional pressure cooker (e.g., Instant Pot). Introduce the butter and olive oil, allowing the butter to melt and shimmer. Add the carrots, celery, and onion, and cook until the onion softens and becomes nearly translucent, approximately 3 minutes.

02

Step

Incorporate the diced ham and continue to cook for another minute.

03

Step

Add the diced potato, stirring frequently to prevent sticking, for about 2 minutes. Season generously with salt and pepper. Pour in 3 cups of chicken broth, followed by the split peas and bay leaves. Turn off the 'Sauté' function.

04

Step

Secure the lid, ensuring it's properly locked and the valve is sealed. Select the high-pressure setting and set the timer for 15 minutes. Allow 10-15 minutes for the pressure to build within the pot.

05

Step

Once the cooking cycle is complete, allow the pressure to release naturally for 10-12 minutes. Carefully release any remaining pressure using the quick-release method for approximately 2-3 minutes. Unlock and remove the lid.

06

Step

Taste and adjust the seasoning with salt and pepper as needed. If the soup appears too thick, activate the 'Sauté' function and add the remaining 1 cup of chicken broth. Stir until the soup is heated through and reaches your desired consistency, about 5 minutes. Adjust seasonings once more, if necessary. Serve immediately, garnished with shredded Cheddar cheese.

For a vegetarian version, omit the ham and use vegetable broth instead of chicken broth.
Consider adding a pinch of smoked paprika for a deeper, richer flavor.
If you prefer a smoother soup, use an immersion blender to partially or fully purée the soup after cooking.
