Turn on your Instant Pot and select the 'Sauté' function. Add the olive oil and heat until shimmering. Brown the ground turkey, breaking it up with a spoon, for approximately 3-4 minutes, or until no longer pink. Add the chopped onion and minced jalapeno; sauté for an additional 2-3 minutes, until the onion is softened and translucent.

Stir in the fire-roasted diced tomatoes (with their juices), drained kidney beans, tomato sauce, minced chipotle pepper, and adobo sauce. Add the prepared spice blend, ensuring everything is well combined. Scrape up any browned bits from the bottom of the pot to prevent burning and add depth of flavor.

Secure the Instant Pot lid, ensuring the valve is set to 'Sealing.' Select the 'Manual' or 'Pressure Cook' function and set the timer for 20 minutes. The Instant Pot will take approximately 10-15 minutes to come to pressure.

Once the cooking time is complete, carefully perform a quick release of the pressure according to the manufacturer's instructions (approximately 5 minutes). Be cautious of the steam. Unlock and remove the lid.

Stir the chili thoroughly. Taste and adjust the seasoning with additional salt, if necessary. Serve hot, garnished with your favorite toppings such as sour cream, shredded cheese, green onions, or a dollop of Greek yogurt.

For a richer flavor, consider browning the ground turkey in a separate skillet before adding it to the Instant Pot.
Adjust the amount of chipotle pepper and adobo sauce to control the spiciness of the chili. Start with less and add more to taste.
The cocoa powder and cinnamon enhance the chili's depth of flavor and complexity. Don't skip them!
Feel free to substitute ground beef or chicken for the ground turkey.
This chili tastes even better the next day, as the flavors have more time to meld.
