Remove the whiskey reduction from the heat and allow it to cool to room temperature, about 20 minutes.

Meanwhile, in a small bowl, mix together the espresso powder and 2 tablespoons of whiskey until the espresso powder is fully dissolved. In a medium bowl, whisk together the flour, baking soda, salt, and nutmeg. Set both mixtures aside.

In a large bowl, cream together the softened butter, 3/4 cup brown sugar, and white sugar until the mixture is light and fluffy. Beat in the eggs, one at a time, ensuring each is well incorporated. Mix in the vanilla extract. Stir in the whiskey reduction, followed by the whiskey-espresso mixture. Gradually add the dry ingredients in 3 batches, mixing until just incorporated after each addition. Gently fold in the chopped white chocolate. Cover the dough and refrigerate for at least 1 hour.

Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.

Scoop out 1 1/2 tablespoonfuls of dough and place them approximately 1 inch apart on the prepared baking sheets.

Bake in the preheated oven until the cookies are just set, about 10 minutes. Allow the cookies to cool on the baking sheets for 7 to 10 minutes before transferring them to a wire rack to cool completely.
