Spread sliced bell peppers and onion evenly on the prepared sheet pan. Pour half of the marinade over the vegetables and toss to coat thoroughly. (3 minutes)

Roast the vegetables in the preheated oven for 10 minutes, allowing them to soften and begin to caramelize.

While the vegetables are roasting, place the mahi mahi pieces in a separate bowl and pour the remaining marinade over them. Toss gently to ensure each piece is well coated. Let the fish marinate for 10 minutes, allowing the flavors to penetrate. (12 minutes)

Remove the sheet pan from the oven. Arrange the marinated mahi mahi pieces evenly over the partially cooked vegetables. (2 minutes)

Return the sheet pan to the oven and continue to bake for approximately 12 minutes, or until the fish is cooked through and flakes easily with a fork. The internal temperature of the fish should reach 145°F (63°C).

Remove from oven and serve immediately. Garnish with your favorite toppings, such as chopped tomatoes, sour cream, guacamole, or fresh cilantro.

For an extra layer of flavor, consider adding a minced garlic clove to the marinade.
Feel free to substitute other firm white fish, such as cod or snapper, for the mahi mahi.
If you prefer spicier fajitas, increase the amount of chili powder or cayenne pepper to your liking.
To prevent the fish from drying out, avoid overcooking it. It should be opaque and flake easily with a fork when done.
Serve with warm tortillas, shredded lettuce, pico de gallo, sour cream, guacamole, and your other favorite fajita toppings.
