Carefully transfer the hot soup to a blender, filling the pitcher no more than halfway full. Secure the lid tightly and, starting on low speed, gradually increase to high. Blend until completely smooth. Repeat with any remaining soup. Alternatively, use an immersion blender to puree the soup directly in the pot until smooth.

Return the pureed soup to the pot. Stir in the heavy cream and gently heat over low heat until warmed through. Be careful not to boil, as this can cause the cream to curdle. Taste and adjust seasoning as needed.

For the best flavor, use ripe, in-season tomatoes. Roasting the tomatoes before adding them to the soup will intensify their sweetness.
A pinch of red pepper flakes can add a subtle kick to the soup.
Serve with a swirl of extra cream, a sprinkle of fresh parsley, and crusty bread for dipping.
