Add the pork cubes to the marinade, ensuring they are evenly coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. (2 hours - overnight)

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil for easy cleanup. (5 minutes)

Thread the marinated pork, onion chunks, mushrooms, bell pepper, and zucchini onto skewers. (15 minutes)

Arrange the skewers on the prepared baking sheet. Pour any remaining marinade over the skewers. (2 minutes)

Bake in the preheated oven for 25-30 minutes, or until the pork is cooked through and the vegetables are tender. An instant-read thermometer inserted into the center of a pork cube should register at least 145°F (63°C). (30 minutes)

For an extra layer of flavor, try adding a pinch of grated ginger to the marinade.
Feel free to substitute other vegetables, such as yellow bell peppers, cherry tomatoes, or pineapple chunks.
If grilling the kebabs, preheat your grill to medium-high heat and grill for about 10-12 minutes, turning occasionally, until the pork is cooked through.
