In a large bowl, combine the peeled and cubed potatoes with the remaining 3 coarsely chopped onions. Working in batches, fill the bowl of a food processor with the potato and onion mixture, along with 1 egg per batch. Process until smooth, then transfer to a large bowl. Repeat until all potatoes and onions have been processed. Season generously with ground black pepper. Stir in the cooked salt pork and onion mixture, ensuring it's evenly distributed. Gradually blend in the flour, using just enough to absorb some of the moisture – the batter should remain slightly loose. (Prep time: 25-30 minutes)

Bake in the preheated oven for 25 minutes. Then, reduce the heat to 350 degrees F (175 degrees C) and continue baking for 1 hour, or until the top is evenly browned and a toothpick inserted into the center comes out clean. (Bake time: 1 hour 25 minutes)

For a vegetarian option, substitute the salt pork with mushrooms sautéed in olive oil with a touch of smoked paprika to mimic the smoky flavor.
Consider adding a pinch of nutmeg to the potato mixture for an extra layer of warmth and complexity.
