For a richer flavor, use homemade chicken broth. Add 1/2 cup of dry white wine (such as Sauvignon Blanc or Pinot Grigio) to the sauce for enhanced depth of flavor. Add it after the roux is prepared and before the chicken broth. Feel free to add vegetables such as sauteed mushrooms, peas, or diced bell peppers to the turkey mixture for added nutrition and flavor. For a crispy topping, mix the remaining Parmesan cheese with 1/4 cup of panko breadcrumbs before sprinkling over the tetrazzini. Tetrazzini can be assembled ahead of time. Cover tightly and refrigerate for up to 24 hours before baking. Add 15-20 minutes to the baking time if baking from cold.
