For an extra burst of lemon flavor, brush the cake layers with a simple syrup made with lemon juice and sugar before frosting. Make sure the cake layers are completely cool before frosting to prevent the frosting from melting. If the lemon filling is too tart for your taste, add a tablespoon or two more of sugar. The cake layers can be baked a day ahead and stored at room temperature, tightly wrapped, until ready to assemble.
