For an extra layer of flavor, try adding a tablespoon of Dijon mustard to the dressing. If you don't have snow peas, sugar snap peas or even chopped celery make a great substitute. To toast the almonds, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until lightly golden.
