Follow The Directions

In a medium saucepan, combine the sugar, water, chopped mint, and chopped lemon balm. (5 minutes)

Bring the mixture to a simmer over medium heat, stirring constantly until the sugar is completely dissolved. (5 minutes)

Remove from heat and strain the mixture through a fine-mesh sieve into a heatproof container to remove the solids. (2 minutes)

Stir in the Muscat wine. (1 minute)

Cover the container and refrigerate until thoroughly chilled, at least 4 hours, or preferably overnight. (240 minutes)

Once chilled, stir in the fresh lemon juice. (1 minute)

Pour the chilled mixture into an ice cream maker and freeze according to the manufacturer's instructions until it reaches a soft-serve consistency. (20-30 minutes)

Transfer the sorbet to an airtight container. Press a piece of plastic wrap directly onto the surface of the sorbet to prevent ice crystals from forming. Seal the container. (5 minutes)

For the best flavor and texture, allow the sorbet to ripen in the freezer for at least 2 hours, or ideally overnight. (120 minutes)

For a more intense mint flavor, steep the mint and lemon balm in the hot sugar syrup for 30 minutes before straining.
If you don't have Muscat wine, you can substitute with another sweet white wine or a splash of simple syrup.
Adjust the amount of lemon juice to your preference, depending on the tartness of the lemons.
Make sure your ice cream maker is fully chilled before adding the mixture for optimal results.
