Follow The Directions

01

Step
5 mins

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. (5 minutes)

02

Step
2 mins

Beat in the eggs one at a time, then stir in the vanilla extract until well combined. (2 minutes)

03

Step
3 mins

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. (3 minutes)

04

Step
2 hrs

Divide the dough in half, flatten each portion into a disc, wrap tightly in plastic wrap, and refrigerate for at least 2 hours, or preferably overnight. (2 hours)

05

Step
0 mins

Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.

06

Step
0 mins

On a lightly floured surface, roll out one disc of dough to 1/4 inch thickness. Use cookie cutters to cut out desired shapes.

07

Step
15 mins

Place cookies 1 1/2 inches apart on the prepared baking sheets. (15 minutes)

08

Step
8 mins

Bake for 7-8 minutes, or until the edges are lightly golden. (8 minutes)

09

Step
30 mins

Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. (30 minutes)

10

Step
5 mins

For the frosting: In a medium bowl, whisk together the confectioners' sugar, lime juice, milk, and green food coloring (if using) until smooth and creamy. Add more milk or confectioners' sugar, 1 teaspoon at a time, to adjust the consistency as needed. (5 minutes)

11

Step
20 mins

Once the cookies are completely cool, spread a generous amount of frosting on the flat side of one cookie and top with another cookie to create a sandwich. (20 minutes)

For a more intense lime flavor, add 1 teaspoon of lime zest to the cookie dough and 1/2 teaspoon to the frosting.
If you don't have food coloring, the frosting will still taste delicious without it!
These cookies can be stored in an airtight container at room temperature for up to 3 days.
