Preheat oven to 350°F (175°C). Grease two 9x13 inch baking dishes. (5 minutes)

In a large bowl, combine crumbled cornbread and cubed stale bread. Set aside. (2 minutes)

Melt butter in a large skillet over medium heat. Add chopped onions and celery and cook, stirring occasionally, until softened and translucent, about 8-10 minutes. (10 minutes)

In the bowl with the cornbread and bread cubes, add the cooked onion and celery mixture, turkey broth, diced turkey, cream of chicken soup, chopped hard-boiled eggs, and giblets (if using). Stir well to combine. (5 minutes)

In a separate small bowl, whisk together the flour, parsley, sage, salt, and pepper. Add to the cornbread mixture and stir until well combined. (3 minutes)

Add the beaten eggs to the mixture and stir until everything is evenly moistened. The mixture should be moist and slightly soupy. If it seems too dry, add a little more broth. (2 minutes)

Divide the mixture evenly between the prepared baking dishes. (2 minutes)

Bake in the preheated oven for 1 hour to 1 hour and 20 minutes, or until golden brown and set. A knife inserted into the center should come out clean. (70 minutes)

For an extra layer of flavor, sauté 1/2 cup of chopped mushrooms with the onions and celery.
If you don't have stale bread, you can lightly toast fresh bread cubes in the oven until dried out.
Adjust the amount of broth to achieve the desired consistency. The dressing should be moist but not soggy.
For a richer flavor, use homemade turkey or chicken broth.
Leftover dressing can be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave.
