Mix corn into the beef mixture and toss to defrost. Drain and discard fat. Add about 1/4 of the shredded Mexican cheese blend and mix well. Pour meat sauce into a 9x13-inch casserole dish. Cover meat with a thin layer of salsa.

Combine cornmeal, salt, and baking soda in a large bowl. Add milk and eggs; stir until well blended. Pour cornmeal mixture on top of salsa layer and top with remaining shredded Mexican cheese blend.

For a vegetarian option, substitute the ground beef with 1 (15-ounce) can of black beans, rinsed and drained, and 1 cup of cooked quinoa.
Feel free to add other vegetables to the beef mixture, such as diced zucchini or green bell pepper.
For a spicier kick, add a pinch of red pepper flakes to the beef mixture or use a spicy salsa.
Serve with a dollop of sour cream, guacamole, or a sprinkle of chopped cilantro.
