Preheat the oven to 425 degrees F (220 degrees C). (5 minutes)

Slice chicken breasts in half horizontally to create 4 thin cutlets. In a small bowl, combine Italian herb blend, garlic granules, onion granules, salt, and pepper. Season chicken on all sides with the herb mixture. (5 minutes)

Pour olive oil into a deep cast iron skillet or other oven-safe skillet and place over medium-high heat. Once the oil is shimmering, add the chicken and sear until golden brown, about 3 to 4 minutes per side. Remove chicken from skillet and set aside on a plate. (10 minutes)

Pour orzo into the skillet. Add chicken broth and balsamic vinegar, stirring to combine. Return the chicken to the skillet, nestling it amongst the orzo. Scatter the halved cherry tomatoes around the chicken, and top each chicken breast with slices of fresh mozzarella. (5 minutes)

Bake in the preheated oven until an instant-read thermometer inserted into the thickest part of the chicken registers 165 degrees F (74 degrees C), approximately 20 minutes. If the cheese isn't sufficiently golden, turn on the broiler for the last 2 minutes, watching carefully to prevent burning. (22 minutes)

Remove from oven and let rest for 5 minutes before serving. Sprinkle with freshly sliced basil and drizzle generously with balsamic glaze. (5 minutes)

For a richer flavor, marinate the chicken in balsamic vinegar and herbs for at least 30 minutes before searing.
Feel free to substitute other small pasta shapes for orzo, such as ditalini or small shells.
Add a handful of spinach or arugula to the skillet during the last few minutes of baking for added nutrients and color.
If you don't have balsamic glaze, you can make your own by simmering balsamic vinegar in a saucepan over low heat until it thickens to a syrupy consistency.
Serve immediately for the best flavor and texture.
