In a medium saucepan, whisk together the beaten egg, sugar, and flour. Add half of the drained pineapple chunks, the softened butter, and vanilla extract. Cook over low heat, stirring constantly, until the mixture thickens, approximately 8-10 minutes. Pour the mixture into an 8x8 inch dish and evenly spread the thawed whipped topping over the base. Chill in the refrigerator for at least 1 hour, or until firm.

In a separate bowl, dissolve the orange flavored Jell-O® mix in the boiling water, stirring until completely dissolved. Add the cold water and stir to combine. Refrigerate for 1 hour, or until the gelatin is thick but not fully set.

Gently fold the sliced bananas and remaining pineapple chunks into the partially set orange gelatin. Carefully spread this mixture evenly over the chilled whipped topping layer in the dish. Return the dish to the refrigerator and chill for at least 3 hours, or until the gelatin layer is completely firm.

For an extra touch, toast some chopped pecans or walnuts and sprinkle them on top of the salad just before serving.
If you're short on time, you can use pre-made vanilla pudding instead of the egg, sugar, and flour mixture. Simply mix the pudding with half the pineapple and proceed with the recipe.
To prevent the bananas from browning, toss them with a little lemon juice before adding them to the gelatin.
