Follow The Directions

01

Step

Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with parchment paper. (5 minutes)

02

Step

Prepare the vegetables: Cut the patty pan squash into 1/2-inch wedges. Vertically slice the red onion into thin crescents. (10 minutes)

03

Step

In a large bowl, combine the squash, onion, olive oil, coriander, salt, and pepper. Toss gently but thoroughly to ensure the vegetables are evenly coated with the oil and seasonings. (5 minutes)

04

Step

Spread the seasoned vegetables in a single, even layer on the prepared baking sheet, ensuring not to overcrowd. (2 minutes)

05

Step

Bake in the preheated oven until the squash is tender and lightly browned, approximately 20 to 25 minutes.

06

Step

While the squash roasts, whisk together the melted butter, lemon juice, chives, and lemon zest in the same large bowl you used earlier. (3 minutes)

07

Step

Once the squash is cooked, remove it from the oven and immediately transfer it to the bowl with the butter mixture. Gently toss to coat every piece of squash. (2 minutes)

08

Step

Serve hot, garnished with additional fresh chives or a sprinkle of finely shaved Parmesan cheese, if desired.

For an extra layer of flavor, try adding a pinch of red pepper flakes to the spice mixture.
Feel free to experiment with other herbs, such as dill or parsley, in place of or in addition to the chives.
If you don't have parchment paper, you can grease the baking sheet with olive oil to prevent sticking.
Smaller patty pan squash will be more tender and may require slightly less cooking time.
