Whisk flour, cream of tartar, baking soda, and salt in a bowl; set aside. (2 minutes)

Mash vegetable shortening and margarine together in a large bowl until thoroughly combined; beat in 1 ½ cups sugar, eggs, and 1 teaspoon vanilla extract. Stir in flour mixture until forms a workable dough; spread into a rectangle shape on an ungreased 12x17-inch baking sheet. (10 minutes)

Bake in the preheated oven until very lightly browned, 8 to 10 minutes. Cool completely. (20 minutes)

Meanwhile, mash cream cheese with remaining each 1 cup sugar and 2 teaspoons vanilla extract in a bowl until smooth. Place sliced bananas in a separate bowl; gently toss with lemon juice to prevent browning. (10 minutes)

Spread cream cheese mixture over cookie base in an even layer to cover; smooth. Place blueberries in neat, closely spaced rows in a square in the upper left corner for the stars. Arrange alternating rows of sliced bananas and sliced strawberries across pizza for the stripes. Refrigerate leftovers. (15 minutes)

For an extra touch of flavor, try adding a hint of almond extract to the cream cheese frosting.
Feel free to get creative with your fruit arrangement! Other fruits like raspberries, blackberries, or kiwi can also be used.
The cookie crust can be made a day ahead and stored in an airtight container at room temperature.
If you don't have cream of tartar, you can substitute with 2 teaspoons of lemon juice or white vinegar.
