In a large stock pot, whisk together vinegar, mustard, white sugar, and brown sugar. Season with turmeric, salt, black pepper, and red pepper flakes. Stir well to dissolve the sugars and bring the mixture to a rolling boil. (Approximately 5-7 minutes)

Add the shredded cabbage, carrots, chopped green bell peppers, and onions to the boiling mixture. Return to a boil, then immediately reduce the heat to medium-low. Simmer for 20-25 minutes, stirring frequently to ensure even cooking and prevent sticking. (Approximately 20-25 minutes)

Remove from heat and allow to cool slightly before serving. The coleslaw can be served warm or chilled. For best flavor, refrigerate for at least 2 hours before serving to allow the flavors to meld.

For a milder flavor, reduce the amount of red pepper flakes.
This coleslaw can be made a day ahead of time. The flavors will intensify as it sits.
Feel free to experiment with other vegetables, such as red bell peppers or celery.
Adjust sweetness to your preference by adding slightly more or less sugar.
For a creamier texture, consider adding a tablespoon or two of mayonnaise after the coleslaw has cooled.
