Follow The Directions

01

Step

Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper. (5 minutes)

02

Step

In a clean, grease-free glass or metal bowl, beat the egg whites with an electric mixer on medium speed until foamy. (3 minutes)

03

Step

Gradually add the sugar, one tablespoon at a time, while continuing to beat. (5 minutes)

04

Step

Add the lemon juice and increase the mixer speed to high. Beat until stiff, glossy peaks form. The meringue should hold its shape when the beaters are lifted. (7 minutes)

05

Step

Drop the meringue mixture by heaping teaspoonfuls onto the prepared baking sheet, creating small, peaked mounds. (5 minutes)

06

Step

Bake in the preheated oven for 15 to 20 minutes, or until the snow drops are lightly browned and dry on the outside, but still slightly soft on the inside. (20 minutes)

07

Step

Turn off the oven and let the meringues cool completely inside the oven with the door slightly ajar to prevent cracking. (60 minutes)

Ensure your bowl and beaters are completely clean and free of any grease, as this can prevent the egg whites from whipping properly.
For a smoother meringue, use superfine sugar. If you don't have superfine sugar, you can pulse regular granulated sugar in a food processor until it's finer.
The cooling process is crucial for preventing cracks. Be patient and allow the meringues to cool completely in the oven.
Store the completely cooled snow drops in an airtight container at room temperature to maintain their crispness.
