Follow The Directions

01

Step

Aromatics: Heat olive oil in a small skillet over medium heat. Add minced garlic and cumin. Cook and stir until fragrant, about 30 seconds. Be careful not to burn the garlic. (Time: ~1 minute)

02

Step

Blend: Transfer the garlic mixture to a food processor or high-powered blender. Add the rinsed and drained chickpeas, pumpkin puree, water, lemon juice, salt, cayenne pepper, cinnamon, and black pepper. Blend until completely smooth and creamy, scraping down the sides as needed. Add more water, a tablespoon at a time, if a thinner consistency is desired. (Time: ~3 minutes)

03

Step

Serve: Transfer the pumpkin hummus to a serving bowl. Drizzle with a touch of extra virgin olive oil and sprinkle with freshly sliced green onions. Serve immediately with warm pita bread, an assortment of cut-up vegetables (bell pepper strips, carrot sticks, celery sticks, cucumber slices), or your favorite crackers. (Time: ~2 minutes)

For an even smoother hummus, peel the skins off the chickpeas before blending.
Taste and adjust seasonings as needed. A little extra lemon juice or salt can brighten the flavors.
Store leftover hummus in an airtight container in the refrigerator for up to 5 days.
Experiment with different toppings! Toasted pumpkin seeds, a sprinkle of paprika, or a drizzle of tahini can add extra flavor and texture.
