For a richer flavor, use brown butter instead of softened butter. A sprinkle of sea salt on top before baking enhances the sweetness of the raspberry. Substitute other berries and corresponding preserves for a unique twist!
Delightfully simple and bursting with raspberry sweetness, these squares are a joy to create and even more satisfying to devour. Perfect for little hands and big appetites!
Preheat oven to 350 degrees F (175 degrees C). Line an 8x8 inch baking dish with parchment paper, leaving an overhang for easy removal. Lightly grease the parchment paper. (5 minutes)
In a large mixing bowl, combine the flour, oats, and sugar. Add the softened butter and, using your fingertips or a pastry blender, work the butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the almond extract. (10 minutes)
Remove 2 cups of the flour mixture and set aside in a separate bowl. Press the remaining flour mixture evenly into the prepared baking dish to form a crust. (5 minutes)
Spread the raspberry preserves evenly over the crust. Gently crumble the reserved 2 cups of flour mixture over the raspberry layer. Sprinkle the sliced almonds evenly over the top. (5 minutes)
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the preserves are bubbly. (35 minutes)
Let the squares cool completely in the baking dish before lifting them out using the parchment paper overhang. Cut into 9 squares with a sharp knife. (30 minutes cooling time)
For a richer flavor, use brown butter instead of softened butter. A sprinkle of sea salt on top before baking enhances the sweetness of the raspberry. Substitute other berries and corresponding preserves for a unique twist!
