In a blender, combine the cider vinegar, lime juice, minced garlic, ground cumin, Dijon mustard, black pepper, salt, olive oil, and chopped cilantro. Blend until smooth and emulsified. (Approximately 1 minute).

In a large bowl, gently toss the cooled corn with the rinsed and drained black beans, butter beans (or cannellini beans), finely chopped red onion, and finely chopped red bell pepper.

For an extra layer of flavor, try grilling the corn before adding it to the salad.
Feel free to add other vegetables like chopped avocado or jalapeño for added creaminess or spice.
If you don't have fresh cilantro, you can substitute with fresh parsley.
Taste and adjust the seasoning as needed before refrigerating. You may want to add a pinch more salt or a squeeze of lime juice.
