Follow The Directions

01

Step

Preheat oven to 350°F (175°C). Line a baking sheet with aluminum foil. (5 minutes)

02

Step

Drizzle the inside of each spaghetti squash half with olive oil, then season generously with salt and pepper. Place the squash halves, cut-side up, on the prepared baking sheet. (5 minutes)

03

Step

Roast in the preheated oven until the squash is easily pierced with a fork, approximately 30 to 45 minutes. (40 minutes)

04

Step

While the squash is roasting, cook ground turkey in a large skillet over medium heat until browned, breaking it up with a spoon. Drain any excess fat. (10 minutes)

05

Step

In a separate bowl, combine the diced tomatoes, asparagus, diced onion, chopped basil, minced garlic, oregano, remaining salt, and pepper. Mix well to combine. (5 minutes)

06

Step

Add the vegetable mixture to the skillet with the browned ground turkey. Cook, stirring occasionally, until the asparagus is tender-crisp, about 5 minutes. (5 minutes)

07

Step

Pour in the chicken broth and simmer for another 5 minutes, allowing the flavors to meld and the sauce to thicken slightly. (5 minutes)

08

Step

Remove the cooked spaghetti squash from the oven and let it cool slightly until it's easy to handle. (10 minutes)

09

Step

Using a fork, scrape the inside of the spaghetti squash to create strands, transferring them to a serving dish or back into the emptied squash shells for a rustic presentation. (10 minutes)

10

Step

Top the spaghetti squash strands with the flavorful turkey-vegetable mixture. Serve immediately and enjoy!

For an extra layer of flavor, consider adding a sprinkle of grated Parmesan cheese or a dollop of ricotta cheese on top of the finished dish.
Feel free to substitute other vegetables based on your preference or what's in season. Zucchini, bell peppers, or mushrooms would all be excellent additions.
If you're short on time, you can use pre-cooked ground turkey or substitute it with another protein of your choice, such as ground chicken or sausage.
To prevent the spaghetti squash from becoming too watery, make sure to drain the diced tomatoes before adding them to the skillet.
