For an extra layer of flavor, consider adding a squeeze of fresh lime juice to the seitan mixture during the last few minutes of cooking. Feel free to adjust the amount of chili powder to your desired level of spiciness. If you don't have smoked paprika, regular paprika will work, but the smoked version adds a wonderful depth of flavor. To make ahead, the seitan and vegetable mixture can be prepared in advance and reheated before serving. Experiment with different vegetables! Zucchini, mushrooms, or poblano peppers would all be delicious additions.
