Cook and Stir: Cook, stirring frequently, until the seitan is heated through and the spices are fragrant, about 5-8 minutes. Ensure the seitan is nicely coated with the seasoning and has a slight sizzle.

Warm the Tortillas: While the seitan filling is cooking, warm the tortillas according to package directions. This can be done in a dry skillet, microwave, or oven.

Assemble and Serve: Spoon the seitan and vegetable mixture onto each warm tortilla. Fold or roll the tortilla around the filling. Serve immediately with your favorite toppings such as salsa, guacamole, vegan sour cream, chopped cilantro, and lime wedges.

For an extra layer of flavor, consider adding a squeeze of fresh lime juice to the seitan mixture during the last few minutes of cooking.
Feel free to adjust the amount of chili powder to your desired level of spiciness.
If you don't have smoked paprika, regular paprika will work, but the smoked version adds a wonderful depth of flavor.
To make ahead, the seitan and vegetable mixture can be prepared in advance and reheated before serving.
Experiment with different vegetables! Zucchini, mushrooms, or poblano peppers would all be delicious additions.
