Follow The Directions

01

Step

Place the chicken thighs into a 6-quart slow cooker. (5 minutes)

02

Step

In a separate bowl, whisk together the Greek yogurt, lemon zest, lemon juice, olive oil, salt, basil, oregano, garlic powder, onion powder, thyme, and black pepper until well combined, forming a luscious marinade. (10 minutes)

03

Step

Pour half of the yogurt mixture over the chicken in the slow cooker, ensuring each piece is generously coated. Reserve the remaining yogurt mixture in the refrigerator for later use. (5 minutes)

04

Step

Cover the slow cooker and cook on Low for 4 to 5 hours, or until the chicken is incredibly tender and easily shreds with a fork. (2 minutes)

05

Step

Remove the cooked chicken from the slow cooker and roughly chop or shred it. If desired, carefully remove half (or more) of the cooking liquid from the slow cooker to achieve a thicker, less saucy consistency. Alternatively, leave all the cooking liquid for a more abundant and flavorful sauce. (10 minutes)

06

Step

Return the chopped chicken to the slow cooker. Stir in a 1/4 cup of the reserved yogurt mixture to add an extra layer of creaminess and tang. Taste the sauce and adjust seasoning with salt and pepper as needed. (5 minutes)

07

Step

Replace the lid on the slow cooker and allow the chicken to warm through for about 10 minutes, ensuring it's heated evenly. Serve immediately, garnished with fresh herbs and a dollop of the remaining yogurt mixture, if desired.

For a richer flavor, marinate the chicken in half of the yogurt mixture in the refrigerator for at least 2 hours or overnight before slow cooking.
Serve this dish with a side of warm pita bread, fluffy rice, or a vibrant Greek salad for a complete and satisfying meal.
Feel free to experiment with different herbs and spices to customize the flavor profile to your liking. A pinch of red pepper flakes can add a subtle kick, while a sprinkle of fresh dill or parsley will brighten the dish.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a saucepan over medium heat, or in the microwave.
