Follow The Directions

Cook on Low heat for 8 hours, or on High heat for 4 hours, until the tongue is very tender. (Cook time: 4-8 hours)

Carefully transfer the cooked beef tongue to a cutting board. Allow it to cool slightly until you can handle it without burning yourself. (Cooling time: 15-20 minutes)

Using a sharp knife, peel off the outer layer of skin from the beef tongue. Remove the tough, rough end. (Prep time: 10-15 minutes)

Chop the peeled beef tongue into bite-sized pieces. (Prep time: 5-10 minutes)

In a skillet over medium heat, melt the butter. Add the chopped beef tongue and cook, stirring occasionally, until heated through and slightly browned. (Cook time: 5-10 minutes)

Season with salt and pepper to taste. Serve immediately, preferably in warm tortillas with your favorite taco toppings.

For easier peeling, after cooking, plunge the tongue into an ice bath for a few minutes.
The cooking liquid (broth) can be reserved, strained, and used as a flavorful base for soups or stews.
Lengua is delicious in tacos, burritos, or even served over rice.
Consider adding a pinch of cumin or smoked paprika to the skillet for added depth of flavor.
