For a vegetarian version, omit the ham and use vegetable broth. You may want to add a teaspoon of smoked paprika to enhance the smoky flavor. If you like a thicker soup, mash some of the lentils against the side of the slow cooker before serving. To add more depth of flavor, sauté the onions, carrots, and celery in a tablespoon of olive oil before adding them to the slow cooker. This soup freezes well. Allow it to cool completely before transferring to freezer-safe containers. It will keep for up to 3 months. Adjust the amount of spices to your liking. Feel free to add a pinch of red pepper flakes for a little heat.
