Slow Cook the Magic: Transfer the pork mixture to your slow cooker. Add the Shaoxing rice wine, light soy sauce, scallions, ginger slices, and star anise pods. Pour in enough water to just cover the pork. (2 minutes)

Patience is Key: Cook on Low heat for approximately 6 hours, or until the pork is incredibly tender and easily pierced with a fork. (360 minutes)

Add the Finishing Touches: Gently stir in the diced vegetarian chicken substitute and the peeled hard-boiled eggs. Add more water if needed to ensure the eggs are mostly submerged. (2 minutes)

For an even richer flavor, consider using a combination of pork belly and pork shoulder. The shoulder will add more depth to the dish.
Adjust the amount of sugar to your liking. If you prefer a less sweet dish, reduce the sugar to 2 tablespoons.
If you don't have Shaoxing rice wine, dry sherry can be used as a substitute.
The vegetarian chicken substitute can be omitted if desired.
Serve with steamed rice and your favorite stir-fried vegetables, such as bok choy or gai lan.
