Follow The Directions

01

Step

In a large soup pot, heat the olive oil over medium heat. Add the diced onions and carrots and cook, stirring occasionally, until the onions begin to soften (about 2 minutes).

02

Step

Add the butter to the pot and let it melt into the vegetables. Stir in the diced zucchini and minced garlic, cooking until the onions become translucent (approximately 7 minutes).

03

Step

Pour in the beer, seafood seasoning, dried parsley, garlic powder, chile-garlic sauce, sea salt, dried oregano, and black pepper. Gently place the catfish fillets on top of the vegetables. Pour the stewed tomatoes with their juice over the catfish and vegetables. Cover the pot and bring to a gentle simmer.

04

Step

Allow the chowder to simmer until the catfish is cooked through and flakes easily with a fork (about 10 minutes). Break the catfish fillets into bite-sized chunks using a spoon or fork.

05

Step

Add the can of water and the drained corn to the pot. Simmer the chowder, covered, until the vegetables are tender and the flavors have fully melded together (at least 30 more minutes).

For a richer flavor, consider using fish stock instead of water.
Adjust the amount of chile-garlic sauce to suit your spice preference.
A squeeze of fresh lemon juice at the end brightens the flavors.
Serve hot with a side of crusty bread for dipping.
