Heat the Skillet: Place a 12-inch nonstick skillet over medium heat. Add approximately 1/4 inch of avocado oil to the skillet. Heat until the oil is shimmering, indicating it's hot enough for frying. (3 minutes)

Fry the Fritters: Using a 1/4 cup measure, drop 6 mounds of the chicken mixture into the hot oil. Gently press each mound into a 3-inch fritter. Cook for 2 to 3 minutes per side, or until the chicken is cooked through and the fritters are golden brown and crispy. (15 minutes)

Drain and Serve: Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Repeat with the remaining chicken mixture. Serve warm and enjoy! (5 minutes)

For an extra layer of flavor, try adding a pinch of smoked paprika to the chicken mixture.
If you don't have Hatch chiles, you can substitute with another mild green chile variety.
Be careful not to overcrowd the pan when frying the fritters, as this can lower the oil temperature and result in soggy fritters.
