In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium-low heat. Add mushrooms, onion, carrots, and garlic. Sauté until softened, about 5-7 minutes.

Pour in chicken stock and add basil. Bring to a simmer, then reduce heat to low, cover, and let simmer for 10 minutes to allow the basil to infuse the broth.

Stir in kale, curry paste, salt, and pepper. Return to a simmer and cook until kale is tender, about 10 minutes.

Add shrimp, diced tomatoes, and kidney beans. Simmer until shrimp are pink and cooked through, about 5-7 minutes. Stir in lemon juice.

Ladle into bowls and garnish with lemon wedges. Serve immediately.

For a richer flavor, use homemade chicken stock.
Adjust the amount of curry paste to control the spiciness. Start with 1/2 teaspoon and add more to taste.
If you don't have kidney beans, cannellini beans or chickpeas work well as substitutes.
Make sure not to overcook the shrimp, as they will become rubbery. They are done when they turn pink and opaque.
