Prepare the Mango (5 minutes): Using a vegetable peeler, peel the mango. Continue to peel thin slices of mango flesh down to the pit. Stack the mango strips and slice them into thin strips, then dice crosswise to create a very fine dice. Transfer the diced mango to a small, non-reactive bowl.

Combine and Season (2 minutes): Gently stir in the finely chopped cilantro, Asian chili pepper sauce, and rice wine vinegar into the diced mango. Add just a tiny pinch of salt to enhance the flavors. Taste and adjust seasoning as needed – perhaps a touch more chili for extra heat, or a squeeze of lime for brightness.

For the best flavor, use a perfectly ripe but firm mango. Overripe mango will be too soft and mushy.
If you don't have rice wine vinegar, lime juice can be substituted. Start with 1 teaspoon and add more to taste.
This relish is best served fresh, but it can be made a few hours ahead of time. Store it in an airtight container in the refrigerator.
Adjust the amount of chili pepper sauce to your liking. A little goes a long way!
