For the best flavor, use a perfectly ripe but firm mango. Overripe mango will be too soft and mushy. If you don't have rice wine vinegar, lime juice can be substituted. Start with 1 teaspoon and add more to taste. This relish is best served fresh, but it can be made a few hours ahead of time. Store it in an airtight container in the refrigerator. Adjust the amount of chili pepper sauce to your liking. A little goes a long way!
