For a vegetarian option, substitute the Italian sausage with plant-based sausage or additional vegetables like zucchini and carrots.
Adjust the amount of red pepper to your preference for spiciness. Start with less and add more to taste.
To thicken the chowder further, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the chowder during the last 30 minutes of cooking.
Garnish with fresh cilantro, shredded cheese, or a dollop of sour cream before serving for added flavor and visual appeal.
