Place eggs in a large saucepan and cover with cold water. Bring to a boil over medium-high heat, then remove from heat, cover, and let stand in the hot water for 15 minutes. (15 minutes)

Transfer the hard-cooked eggs to a bowl of ice water to stop the cooking process and allow them to cool completely. (30 minutes)

If using egg dye, prepare it according to the package directions in a large metal or glass bowl.

Gently crack the cooled eggs all over, but do not remove the shells. This allows the dye to seep through and create a marbled effect on the egg whites.

If using egg dye, working in batches, place the cracked eggs into the dye until the color seeps through the cracks and lightly colors the egg whites. (5 minutes per batch)

Rinse the dyed eggs or the plain hard-boiled eggs under cold water. Peel the eggs carefully to expose the green marbled color (if dyed). Slice the eggs in half lengthwise.

Carefully scoop out the egg yolks into a medium bowl. Mash the yolks with a fork until smooth.

Add the minced celery and mayonnaise to the mashed yolks. Mix well until the mixture is creamy and fully combined. Stir in green food coloring, if using, to achieve the desired shade of green.

Spoon or pipe the yolk mixture evenly into the egg white halves.

Garnish each deviled egg with a fresh parsley leaf before serving.

For a more intense green color, let the eggs sit in the dye solution longer. However, be mindful that the dye can penetrate the egg whites more deeply.
Finely minced celery adds a subtle crunch and fresh flavor. Adjust the amount to your preference.
For a smoother yolk mixture, consider using a food processor or hand mixer.
These deviled eggs are best served chilled. Prepare them in advance and refrigerate until ready to serve.
