For a vegetarian version, omit the chicken and add a can of drained and rinsed chickpeas or firm tofu, cubed, during the last few minutes of stir-frying. Other vegetables like bell peppers, zucchini, or snow peas can be added or substituted. Add a dash of sesame oil at the end for added flavor. Adjust the amount of soy sauce according to your preference. You can also add a pinch of red pepper flakes for a little heat.
