For best results, use fresh, seasonal rhubarb and strawberries. If you don't have plain yogurt, you can substitute sour cream or Greek yogurt. The buckle can be served warm or at room temperature. It's delicious on its own or with a scoop of vanilla ice cream or a dollop of whipped cream. To make ahead, you can prepare the filling and topping a day in advance and store them separately in the refrigerator. Adjust the amount of sugar in the filling to your liking, depending on the sweetness of your strawberries and rhubarb.
