Shape the Galettes: On a lightly floured surface, gently flatten each puff pastry sheet with a rolling pin to slightly enlarge it. Cut each sheet into four equal squares. Using a sharp knife, score a border approximately 1/4 inch from the edges of each square, being careful not to cut all the way through the dough. This will create a raised edge when baked.

Preheat Oven: Preheat your oven to 400°F (200°C).

Assemble Galettes: Arrange the puff pastry squares on a baking sheet lined with parchment paper. Spread the goat cheese mixture evenly within the scored borders of each square. Top with the sautéed onion mixture. Chill the assembled galettes in the refrigerator for 5-10 minutes to help prevent the pastry from shrinking during baking.

Arrange Vegetables: Artistically arrange the thinly sliced zucchini and tomato slices in an overlapping pattern on top of the goat cheese and onion mixture. Season with sea salt and freshly ground black pepper to taste. Drizzle each galette with about 1 teaspoon of olive oil.

Bake and Garnish: Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and puffed up. Remove from the oven and garnish with thinly sliced fresh basil leaves before serving.

For a richer flavor, consider adding a drizzle of balsamic glaze after baking.
Feel free to experiment with other summer vegetables such as yellow squash, bell peppers, or eggplant.
To make ahead, assemble the galettes up to the baking step and store them in the refrigerator for up to 24 hours. Add a few minutes to the baking time if baking from cold.
A sprinkle of red pepper flakes can add a pleasant touch of heat.
