For an even richer coconut flavor, consider using full-fat coconut milk instead of coconut water. Dilute it with water to reach the desired consistency.
To prevent the rice from sticking to the bottom of the pot, use a heavy-bottomed saucepan.
Adjust the amount of cilantro to your preference. A little goes a long way!
This rice is best served fresh. If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days.
