In a saucepan, combine the jasmine rice, unsalted butter, minced fresh ginger root, coconut milk, water, and salt. Bring the mixture to a boil over high heat. (5 minutes)

Once boiling, reduce the heat to medium-low, cover the saucepan, and simmer until the rice is tender and all the liquid has been absorbed. (20 minutes)

Remove the saucepan from the heat and fluff the rice with a fork. Allow the rice to cool completely, then refrigerate until thoroughly chilled. (1 hour)

Heat the peanut oil in a large skillet over medium-high heat. Add the minced garlic, shallot, minced Thai chile pepper, ginger, and lemon grass to the skillet. Cook, stirring frequently, until the shallot becomes translucent and fragrant. (1 minute)

Add the peeled and deveined shrimp to the skillet. Cook, stirring occasionally, until the shrimp turns pink and is nearly cooked through. (3 minutes)

Add the sliced red bell pepper to the skillet. Continue to cook until the shrimp is fully cooked and no longer opaque in the center and the bell pepper is slightly softened. (2 minutes)

Season the shrimp and bell pepper mixture with chopped fresh basil, fish sauce, soy sauce, and lime juice. Stir well to combine. (1 minute)

In a large bowl, gently combine the chilled rice with the cooked shrimp mixture, diced pineapple, and sugar. Mix until all ingredients are evenly distributed. (2 minutes)

Before serving, sprinkle the Thai-style rice salad with freshly chopped cilantro. Serve chilled and enjoy! (1 minute)

For an extra layer of flavor, try grilling the pineapple before dicing and adding it to the salad.
Adjust the amount of Thai chile pepper according to your spice preference.
Make ahead: The rice can be cooked and chilled a day in advance. The shrimp mixture can also be prepared ahead of time and added to the rice just before serving.
